A pale straw yellow in the glass with greenish tinges. The persistent mouse carries with it aromatic notes of apricot, apple and pear. On the palate, light and fresh with a cleansing acidity leading to a lingering finish which suggests further exotic citrus flavours.
This particular Cava is a blend of Macabeo, Parralleda and Xarel.O and fermentation takes place via Methode Champenoise before being aged in bottle for 16 months prior to release. Dry with a vivacious mousse, this makes for a perfect aperitif.
