The palate is quite exhilarating, with a deep texture, piles of mouthwatering minerality and a rich, flavoursome substance, with notes of white flowers, pear and green apple. The fruit has a refreshing, savoury vein, and the wine a bright, vibrant, pithy finish, with an appealing creaminess to the fruit here.
The vines for this cuvee are from 50 years old to 80 years old providing the wine with additional complexity. Winemaker Marc Pasnot allows it to go through malolactic fermentation thus producing softer lactic acids rather than the more astringent malic acids. A miniscule amount of sulphur (2mg/litre) is added before bottling.
