The Georgas family make all kinds of grape-based products and their Retsina is a showstopper. Organic-certified and biodynamic Savatiano grapes are fermented with fresh pine resin; one sip transports you directly to a Greek tavern table covered in blue gingham and plates of dolmadaki, saganaki, souvlaki, tzatziki, Kalamata olives and spanakopita. A certified classic displaying rich balsamic notes, pine, honey, lemon and something of a gin and tonic’s quinine and spice.
